1 kg kepala kakap
1 ikat kemangi
1 batang daun bawang
10 buah cabe rawit merah
1 buah tomat
3 gelas santan
1 sdm garam (secukupnya)
1/2 sdt gula
2 butir asam jawa
Bumbu Rempah
3 lembar daun salam
5 lembar daun jeruk
1 lembar daun kunyit, sobek dan simpulkan
1 batang sereh, memarkan
2 ruas jari lengkuas, memarkan
2 ruas jari jahe, memarkan
1 buah kembang lawang / pekak
Bumbu Halus
7 butir bawang merah
5 siung bawang putih
4 butir kemiri, goreng/sangrai
3 ruas jari kunyit, goreng/sangrai
3 buah cabe merah besar

Langkah Membuatnya
    1. Cuci bersih kepala ikan. Lumuri dengan air jeruk nipis atau lemon.
    2. Didihkan air. Rebus sebentar (kurang lebih 3 menit) kepala kakap, beri sedikit garam. Tiriskan.
    3. Tumis bumbu halus sampai harum, masukkan daun salam, daun jeruk, serai, lengkuas, daun kunyit, bunga lawang, dan jahe.
    4. Masukkan santan. Tunggu sampai mendidih lalu masukkan kepala ikan, asam, gula dan garam. Masak sampai bumbu meresap. Tes rasa.
    5. Masukkan tomat, daun kemangi dan daun bawang. Boleh juga ditambah cabe rawit merah bila suka pedas.
    6. Didihkan kembali, cicipi dan koreksi rasa.
    7. Gulai Kepala Kakap siap disajikan.
