Langkah Membuatnya
- Cuci bersih kepala ikan. Lumuri dengan air jeruk nipis atau lemon.
- Didihkan air. Rebus sebentar (kurang lebih 3 menit) kepala kakap, beri sedikit garam. Tiriskan.
- Tumis bumbu halus sampai harum, masukkan daun salam, daun jeruk, serai, lengkuas, daun kunyit, bunga lawang, dan jahe.
- Masukkan santan. Tunggu sampai mendidih lalu masukkan kepala ikan, asam, gula dan garam. Masak sampai bumbu meresap. Tes rasa.
- Masukkan tomat, daun kemangi dan daun bawang. Boleh juga ditambah cabe rawit merah bila suka pedas.
- Didihkan kembali, cicipi dan koreksi rasa.
- Gulai Kepala Kakap siap disajikan.
